New Book on Norwegian Farmhouse Ale

<< 2022-09-15 13:33 >>

My home-made cover for the book. The publisher will make something better than this.

I just sent to the publisher my academic book on Norwegian farmhouse ale, which summarizes what I've found in nine years of research on the subject. The text I sent is in Norwegian, but I may be able to get it translated into English. The English-language publisher wants to judge interest before they decide, hence this blog post. So if you're interested in that, read on to the end.

So what's in the book?

It's an in-depth analysis of Norwegian farmhouse brewing, using maps, charts, and lots of quotes from primary sources. It's my attempt to show what the brewing was like in all the various places in its full complexity, and to explain how it ended up being like that.

Chapter 1 mainly gets things going, but also has a section on the brewing in the far north of Norway. It looks at where the northern limit for brewing was, and also what brewing in that region was like.

Chapter 2 is a short history of beer in Norway, starting with the very beginning of brewing in Norway, taking it up to the present day. The focus is on how farmhouse brewing began and developed, and on how and when commercial brewing eventually branched off from it. There's also a good bit on the history of brewing cauldrons and when they were introduced, because this becomes important later.

Map of where I can document that there was a tradition for brewing. I colour-coded in elevation so you can see why some parts have no dots. This map is not in the book, but one showing the Arctic north is, in order to support the discussion of the northern limit to brewing.

Chapter 3 is a fairly brief outline of the equipment used, without much analysis. However, it does look at the two main types of lauter tun: with side tap (S-type) or hole in the bottom opened with a long rod sticking up (B-type), and finds that the map of who used what type where shows us how cultural influences spread out over the Norwegian landscape.

Chapter 4 goes into the cultural background and covers what occasions people brewed for, how much they brewed, how strong the beer was, and whether it was men or women brewing. It deeper into the issue of who brewed in the past than I've ever done before. Then we get to how people marked that the beer was finished fermenting, and it turns out oppskåke was only one of several customs. In fact, oppskåke only existed in parts of Norway, and the distribution of these customs isn't at all what you'd guess. Then we get into the names people used (and use) for the farmhouse ale, and beer flaws.

Chapter 5 is a deep dive into the brewing processes used in Norway, going through them step by step. First, acid rest prior to mashing, then all the bizarre ways of mashing, then wort boiling, then hop treatment, and a survey trying to put all of this together. We look at the likely reasons people had for using these methods, how they developed, and so on.

One thing that comes out clearly in this analysis is that western and eastern Norway had clearly distinct brewing processes. The distinction isn't 100% consistent, but close to it. The other parts of Norway mainly look like mixes of east and west.

Then a section on truly weird methods that need to be looked at specially, including the most in-depth review of Norwegian stone beer brewing ever. Finally, we go deeper into the kettle issue and how these processes likely evolved, and possible reasons we ended up with the geographic distribution we did.

One thing that comes out here is that the historical picture is far muddier than anyone has ever really reflected on. The timing of the introduction of the kettle is unknown, but from what we know about it the processes we ended up with are bit hard to explain. Then it also turns out that there's 4500 years of brewing where we can't explain how people brewed. If we make one not too unreasonable assumption we can reduce that to 3000 years, but there's still something very odd about what little we know.

Map of what size of batches people brewed where in liters. This map is not in the book because I had to make room for more important maps and charts.

Chapter 6 goes through what kinds of yeast were in use in Norway, such as bread yeast, farmhouse yeast, lager yeast, etc, and the history of their use and introduction. Then into the different types of farmhouse yeast in Norway, and what types might have existed historically. We also review what's known of the use of yeast in baking and how that relates to yeast in brewing.

All of this to set the stage so the reader can understand the next chapter.

Chapter 7 deep-dives into how people got hold of yeast, when they started buying yeast, and how people have been exchanging farmhouse yeast over the last few decades. Then deep into how people harvested the yeast, and the different methods for keeping the yeast. We get the first-ever surveys of what's known about yeast logs, yeast rings, and yeast cakes in Norway, plus a summary of how people do it today.

Then onto how and why people mixed yeast cultures, what contaminants we've found in these cultures, whether people did yeast starters and how, pitch temperatures, fermentation times, how people approached carbonation, and finally, an attempt to model mathematically what the actual fermentation temperatures were. This goes directly to the "how come a hot-tolerant yeast like kveik come from such a cold country as Norway?" question, and delivers a real answer.

Making a yeast starter from bread yeast at home.

Chapter 8 deals with spice and we get the first real history of hop usage in Norway in about a century, an overview of how it was grown, and details on how it was used. Then the same for juniper, with data on its anti-bacterial effect. Then we run through the rest of the spice in a similar way, dealing also briefly with adjuncts.

Chapter 9 looks at other drinks, starting with small beer, and the many names for that. Then the soured mash drink, juniper berry beer, sugar beer (with some startling details), and birch sap beer. Then the first-ever survey of the making of kvass in Norway. A history of mead in Norway showing that we've only had about 250 years of mead-making here. And finally a survey of the history of cider in Norway.

Chapter 10 is a survey of where farmhouse ale is still brewed in Norway, and how it is brewed in the various areas where it's still alive, and what sort of history it's had in each place over the last century or so. The chapter is based on the 9 years of research data I've collected plus a marathon session of phone interviews I did this summer to extend the survey to areas we didn't know much about previously.

Steaming kettle in a brewhouse in Ulvik, Hardanger. Not used in the book.

Chapter 11 tries to summarize all of this and break Norway into regions of (mostly) similar brewing, and analyzes why we ended up with those specific regions. It gets into how the geography of Norway shaped the brewing traditions and compares it with the distribution of Norwegian dialects. Plus, we look at how the historical developments led to all of this before we finally say goodbye to the reader.

For me, this is the culmination of a nine-year odyssey to try to really understand Norwegian farmhouse brewing in depth. I feel I can say confidently that nothing like this has ever been published before, and I'm quite proud to have taken the project all the way to this level. The closest equivalent to this book would be Odd Nordland's book, which was published in 1969, and mostly focuses on the equipment. (One reason why I've skipped lightly over that in this book.)

I say culmination rather than end, because I don't think it's going to end here, but I'm still hoping this will be the definitive work on the subject. Exactly how to go on from here I'm not sure, although doing similar surveys of Denmark and Sweden are definitely one possibility. If, that is, I can find publishers for those books.

Anyway, the potential publisher of the English translation needs to be convinced that enough people would interested in buying the book, because they're a bit worried it won't sell. If you're interested, please add a comment to that effect to help convince them that the book would find buyers. (The publisher suggested I do this.)

They are also considering whether to do a crowdfunding campaign to reduce the economic risk of publishing. If you have thoughts on that feel free to add them.

For those of you who read Norwegian: the book is expected to be out April 20th 2023, although where you can order it now already.

Congratulations on the book, Lars!

I would be interested in buying this book in English. I would also be willing to participate in a crowdfunding campaign to help fund the project to translate it.

Evan Hunter - 2022-09-15 14:05:14

I'd definitely buy an English translation if one gets published. Hell, I'd consider learning Norwegian if no English translation gets made!

Same as Steve K. Interested in the book in English and willing to participate in crowdfunding it.

Kris Thompson - 2022-09-15 14:13:03

I would buy a copy of this in English in a heartbeat. I’ve read the Odd Nordland book and wished it went further with the actual beer process and this sounds like it will fill all the gaps. I really hope this happens.

David McQueen - 2022-09-15 14:19:26

What a fascinating study and I really hope this does come out in English. So much to learn and I'm sure brewers and brewing courses around Europe would find this of great interest.

Congrats on this achievement! I am a frequent reader of your blog and I own two of your books, Gårdsløl and Historical Brewing. enjoyed both of them very much. I have to admit, though, that I‘d very much prefer to read your latest book in English as my Norwegian language skills are rather basic. So fingers crossed that there will be a version of the book for internationals available soon!

By the way, I also watched some of your talks recently and absolutely loved the one in which you look at Christmas traditions in various regions of Europe and how they relate to one another and to brewing. I would definitely enjoy reading more on these mythical and cultural aspects in the future, too!

Greetings from Germany

Pedro Ortiz - 2022-09-15 16:18:21

Dear publishers; I'd followed Lars' work for a few years and got intantly hooked on the depth of his work not only because of the main topic is located in such a distant country from mine (I'm from Mexico), but in the several facets of brewing that I'd never seen before neither in european nor american books. I think his work is challenging unveiling several "myths" related to brewing that no other author are exploring so far. As mentioned above, not only on the Norweigan brewing as a whole, but as a more comprehensive way to understanding the evolution of brewing that can perfectly can be extrapolated to other wold situations. Translating this book in english surely will open a new discussion on the subject as Lars' previous books and publications. Best regards Pedro Ortiz Mexico - Homebrewer

Ive shared this on Milk the Funk, a group of 32,000 people who love this type of thing and who many have bought Lars' other book. Milk the Funk "The Podcast" was the first interview Lars had done in English and the 2 part interview was one of our most popular. A new book The Botany of Beer was just published in English, in some part because of the interest our group showed in getting it published in English. The announcement of it being in publication was one of our most liked posts with many people ordering the book. Ive attached the link to the first of the two part podcast. https://www.milkthefunk.live/podcast/ep001

Guillaume Galy - 2022-09-17 19:13:44

Historical Brewing Techniques was certainly the most fascinating brewing-related book I've read so far - needless to say, this book in English would be an instant buy from me! I'd definitely back a crowdfunding campaign too.

Joey Coleman - 2022-09-17 22:20:52

I'd definitely be interested in an English translation of this book as well, and I'll keep an eye on this site for any updates on that possibility.

Ted - 2022-09-17 23:18:07

Can’t wait to see this in English!

Thomas Vincent - 2022-09-18 16:48:09

I would be interested in purchasing an English language version.

Jeff Westphal - 2022-09-18 18:45:13

I am definitely interested in an English translation of this work. Sounds fascinating!

Rachel - 2022-09-18 23:31:08

I definitely want a copy of this in English. If it doesn't end up coming out in English, I'll probably settle for a Norwegian copy but I'd get more out of it in English. I'm not sure if I would participate in a crowdfunding campaign though.

Ross - 2022-09-19 04:11:33

Wow! This is amazing. I've been following your work for years before Kveik yeasts became available in the US. I hope translations become available.

Fernando Divina - 2022-09-19 06:45:48

As every Scandinavian “house” produced a brew of a sort and the foodway of Norway is shared through time and place of conquest and influence - a volume translated in the English is anticipated!

Matt Spaanem - 2022-09-19 16:40:32

I'm definitely interested in an english version of this book!

Trevor Fisher - 2022-09-19 17:28:35

Please publish in English!

Mike Jett - 2022-09-20 03:47:43

Lars, Congratulations! The chapter outline looks fantastic. An english copy would be lovely, and I'd certainly spring for one- but I'd still wade through it with Google translate if it was only in Norwegian!

Steve Tinling - 2022-09-20 10:45:18

Hi count me in for purchasing the English translation. Thank you for all the good work and inspiration. Regards, Steve

Evan - 2022-09-20 18:49:12

Congratulations! Your writing on these traditions has been some of the most fascinating beer-related work I've ever seen, I would definitely be interested in an English translation and likewise would support a crowdfund campaign.

Stephen - 2022-09-20 22:40:43

Hi Lars - again, just to repeat what others have already said, very much interested in a copy in English!

litchiliu - 2022-09-21 10:49:59

If there is an English version, I will buy it

RobinS - 2022-09-21 10:56:50

I would love to get a copy of this book in English. I loved your previous books. I would also be happy to help with crowdfunding to cover costs to ensure I could get a copy

David Nilsen - 2022-09-21 14:00:23

I would absolutely be interested in reading the English language version of this book, and would be happy to review it as well.

Bob - 2022-09-22 00:48:06

Put me down for a copy for sure!

Peter Bircham - 2022-09-22 05:13:40

Nice work Lars! thats a lot of effort you've put in. Would love to see this translated into English, would hapily sign up to a crowd funding campaign

Udo Chrosziel - 2022-09-22 08:30:39

Hi Lars, reading your blog for a long time. Would like to see the book in English. TOC makes me most interested. Thanks.

Michael Newman - 2022-09-22 10:20:17

I'm in for a copy!

Alexis L - 2022-09-23 13:59:33

Great news and congrats! I'd be interested in an English translation for sure. Cheers!

japan brewer - 2022-09-24 04:09:24

I want to read it.

Rob Kuehnel - 2022-09-24 04:43:53

I definitely want to read this book. Please publish an English translation.

Dave Bonta - 2022-09-25 01:52:01

Hell yes. It's fascinating material, and your research is second to none, so I can't believe it wouldn't sell to all the craft beer nerds over here.

Max Planck - 2022-09-25 20:02:04

I'd buy it in English. I really like your other book and have read the blog for years. I'd do crowdfunding. Congrats.

Lars Marius Garshol - 2022-09-26 09:58:19

Thank you all very much for the support! It's a bit overwhelming, to be honest, and very much appreciated.

It persuaded the foreign publisher, so they have now started negotiations with my Norwegian publisher for the English rights. I assume they will be successful, but don't know much about that side of it.

Jeff - 2022-09-27 19:28:26

I would love to see an English version of the book!

John - 2022-09-28 04:10:46

Would love to see an English version! Your historical brewing techniques book has been my favorite beer book and I would not hesitate to buy an English copy of this new one if it gets translated.

Patrick Davies - 2022-09-28 10:12:54

Hi Lars, That sounds promising that the English version is going ahead. I will definitely want to order a copy - your Historical Brewing Techniques was probably the most interesting book about beer I've read. Good luck, Paddy

Lars Marius Garshol - 2022-09-28 17:06:41

Again: thank you all so much for the comments. I just hope you realize that while HBT was a piece of storytelling (though obviously fact-based) this is an academic book. It's also telling a story, but one that's much more historical and abstract, and far less emotional.

Rafael Dubois - 2022-09-29 12:38:04

This sounds like an amazing research that I would love to have it in English. Thank you so much

Brett Binns - 2022-10-01 16:54:12

I enjoyed HBT and would be interested in buying this book as well.To be certain, I don't think that HBT informed my brewing practice much, but was instead simply a very interesting book to read. This will be a different book as you have said, but I suspect that it would be interesting for the same reasons: detailed and in depth research into practice of brewing, but this time in a more concentrated region. Thanks.

Dan Pixley - 2022-10-01 22:55:46

We need this book in English, Please!

Ryan Schaan - 2022-10-01 23:22:12

Please publish in English.

Ivar Andreas Geithung - 2022-10-02 00:14:50

Utrolig arbeid du gjør. En viktig del av et stort verk, somm burde komme på fler språk enn norsk Og engelsk.

Lars Marius - 2022-10-02 00:22:06

@Ivar: Takk.

Joe Stange - 2022-10-02 12:57:38

Yes, an English version, please!

Christian Burg - 2022-10-02 21:22:33

Dear Lars, I'm highly interested in the book. Unfortunally, I don't speak norwegian (lucky norwegian speakers!), so I have to wait for an english version. I had so many essential informations for my brewing from Your book "Historical Brewing Techniques" that I can't hardly wait for Your new book. Thank You so far for Your basic research in brewing culture an techniques in scaninavia and the baltic states. When reading Your book, I had alwas the feeling, something similar could be found in central europe, but we are all too blind to see it.

Lars Marius Garshol - 2022-10-02 22:19:43

Thanks for that, Christian. For some reason I didn't describe it in Historical Brewing Techniques, but Carinthian steinbier was farmhouse brewing in central Europe. I'm not referring to the commercial Klagenfurt breweries, but the steinbier brewing as it was a century before.

There must be more, but we haven't found the sources yet.

Ursula Hewson - 2022-10-03 04:01:45

Another request for an english version here. I have "Historical Brewing Techniques" and would like to learn more about farmhouse brewing. The end game would be to brew local farmhouse ale from my own grains.

Your work is appreciated. I will most definitely buy the next book you publish in english.

Chris - 2022-10-03 07:16:03

Thank you so much for your work, Lars. I hope for an english Version of your new book. Will definitly buy it. Still hold a voucher from my local book store. This would be the right book to use it for. Greets from Germany

Chris - 2022-10-03 07:18:48

By the way, I like your version of the cover. Would be,a great cover for the International version.

Leandro - 2022-10-04 21:18:29

I'd be interested in buying an English copy....

Matt Westerberg - 2022-10-05 01:31:28

I bought multiple copies of your last book, one for myself and more for my brewing friends. I would love to do the same again, and a crowdfunded option would be fine if that’s what it takes. Thank you for the wonderful blog, you have inspired more than one batch of beer in my brewery. Cheers!

Jessica Atkinson - 2022-10-06 21:53:25

Would most certainly want this in English. Norwegian brewing has already been an inspiration and I would love to learn and apply more techniques in the brewery.

Kiki - 2022-10-07 21:01:14

Saludos Lars!

John Banks - 2022-10-07 21:17:29

Would definitely buy the English version. Or the ebook if its easier for you to publish

Johnny Maltby - 2022-10-08 06:38:06

Carl Baar - 2022-10-17 06:39:02

I’ve been waiting a long time for a book like this and I can’t wait to read it. Thanks very much for all the hard work that’s been put into collecting information and writing about this topic. My Norwegian isn’t strong so I would definitely buy an English version of this text. It would be great if there was a physical copy and ebook version available.

I would buy this, and would be willing to preorder or contribute to crowdfunding.

Reynold - 2023-05-31 04:57:03

A version in English would be great. An academic book on this subject is just what is needed. Really enjoyed your "Historical Brewing Techniques - The Lost Art of Farmhouse Brewing". Would like to know more on the ways that farmhouse brewers keg and store their beers.

Thomas Worsley - 2023-06-06 07:48:10

Loved traditional farmhouse brewing and hope this latest book can be made available in English.

Warleigh - 2023-06-30 03:15:54

I’d happily buy the book in English as well.

René Rehorska - 2024-01-15 15:47:35

Lars, i would love to buy your book, translated into English! I think it is an enrichment to brewing literature in general, much like Historical Brewing Techniques. My students are also very interested in brewing historical and uncommon beer styles. Hence, i am surely going to recommend it to them! Cheers, René

Tim Anderson - 2024-02-15 19:56:55

An English-language version of this book would be fantastic! I find beer history fascinating and this sounds right up my alley. Being of Norwegian descent, but, alas, severely lacking in my understanding of the Norwegian language, a translated version is what I'd purchase...and, heck, maybe even a few more copies for friends and family!

Anton Heed - 2024-02-26 21:29:20

Looking forward to this important work. I read Nordlands excellent book when I wrote my student thesis on the possible brewing process of the "mölska" in the Egtved Girl burial. Nordic farmhouse ale is a window into the fascinating past, and with your pivotal role of the rediscovering of kveik and these traditions I am assured your new book will be for the future what Nordlands book was for our us.
